A New Recipe!!!!

Calzones!!!!

Here is a picture of the Calzones that we had for dinner last night!

Calzones are a WONDERFUL meal! You can pretty much put ANYTHING in them! Whether you want pepperoni pizza, a breakfast calzone with eggs and cheese and maybe sausage, or do what I did and use up some of those leftovers in the fridge! Yes! I said LEFTOVERS!!! For my filling last night I used up the broccoli and cauliflower I had in the fridge, just diced them a little smaller. Put some mashed potatoes in there which I ALSO had in the fridge. And mixed it with Cream of Chicken Soup, and then I actually made some chicken breasts on the stove for it. Diced it into fairly bite size pieces, some were a little bigger. Mixed ALL of that in a bowl and started filling the dough. These are also WONDERFUL timesavers for a meal too. Once you have them stuff on a cookie sheet, throw them in the oven for 20 minutes and DINNER IS SERVED!!!!

Here is the recipe for the Calzone Dough:

1 Tablespoon Yeast
1 Tablespoon Sugar
1 Cup of Warm Water
2 Tablespoons Oil (vegetable oil works well)
1 Teaspoon Salt
2 3/4 - 3 1/4 cup Flour

Dissolve yeast in warm water. Add sugar. Let it set for a few minutes until foamy (if you're using fast-rise yeast, you can just add the yeast with the flour and go on) Then stir in oil, salt and flour. Knead 5 minutes. Let sit 5 minutes. Divide dough into 6 pieces. Roll/pat each piece into a circle (maybe about 6" across or so) Top half with filling of choice, keeping back from the edges so it will seal well. Fold the other 1/2 of the circle over the filling and pinch sides together or seal with a fork. Poke a couple steam vents and bake for 20 minutes at 375 degrees (F).

New Recipe!

Last night for dinner, we had 'Taco Squares' that I found here at Better Budgeting.com

It calls for 1/2 cup to 1 cup of Mayo, however I used Miracle whip and it had that 'tangy' taste which wasn't too bad. But I would definitely recommend using Regular Mayonnaise when doing this. My hubby wasn't too thrilled with it, but the kids and I enjoyed it! :)
